Hemp Seed Muffins
  • A delicious and highly nutritious treat for all the family Makes 8 to 10 muffins

  • 220g /7 oz self- raising flour

  • 2 level teaspoons baking powder

  • 1/2 tsp salt

  • 50g /2 oz Demerara sugar

  • 100g /4 oz caster sugar

  • 1 large egg

  • 50g/2 oz melted butter

  • 3 medium bananas peeled and mashed

  • 25g/ 1 oz Virginia Harvest Shelled Hemp Seeds

  • Extra Hemp seeds to sprinkle

  • Preheat the oven to 220C / 400F Gas 6. Line a muffin tin with baking cases

  • Mix flour, baking powder, salt and sugar together in a large bowl.

  • In a separate bowl mix mashed bananas with egg, melted butter and shelled hemp seeds.

  • Add the dry ingredients into this and mix until just incorporated.

  • The mix should be thick but still able to flow

  • Spoon batter into lined muffin tins. Sprinkle with Virginia Harvest shelled hemp seeds and bake in the preheated oven for approx 25 minutes.

Delicious served warm or cold
