A delicious and highly nutritious treat for all the family Makes 8 to 10 muffins
220g /7 oz self- raising flour
2 level teaspoons baking powder
1/2 tsp salt
50g /2 oz Demerara sugar
100g /4 oz caster sugar
1 large egg
50g/2 oz melted butter
3 medium bananas peeled and mashed
25g/ 1 oz Virginia Harvest Shelled Hemp Seeds
Extra Hemp seeds to sprinkle
Preheat the oven to 220C / 400F Gas 6. Line a muffin tin with baking cases
Mix flour, baking powder, salt and sugar together in a large bowl.
In a separate bowl mix mashed bananas with egg, melted butter and shelled hemp seeds.
Add the dry ingredients into this and mix until just incorporated.
The mix should be thick but still able to flow
Spoon batter into lined muffin tins. Sprinkle with Virginia Harvest shelled hemp seeds and bake in the preheated oven for approx 25 minutes.
Delicious served warm or cold
