These scones are especially delicious, light and soft and gluten free !

Ingredients:

  • 170g rice flour

  • 70g Virginia Harvest Golden Omega Flaxseed flour

  • 56g ground almonds

  • 28g soft brown sugar( Optional)

  • ½ tsp sea salt

  • 1 ½ tsp gluten free baking powder

  • ½ tsp breadsoda

  • 2 tablespoons olive oil

  • 1 medium free range egg

  • 240 mls cultured buttermilk

Mix all the dry ingredients together thoroughly
Mix the wet ingredients together
Add the wet ingredients to the dry ingredients and mix to form a soft spoonable dough

Place dessertspoonfuls onto baking parchment on a baking tray and bake in an oven preheated to 200oC 400oF Gas 6 for 12-15 minutes
